PUMPKINS - THE GOLDEN JEWEL OF THE FALL ......

Finstad Gård first started growing a small quantity of pumpkins in 2003.

The production has increased at a steady pace ever since and has now reached a production area of xx daa.

The pumpkins are sold through wholesalers of  flowers and vegetables.

Pumpkins can be utilized for food as wells as decorations

PUMPKIN SOUP:

Portions; 5-6

1 pumpkin ca 5 kg

4 onions

10 carrots

8 potatoes

1 l water

1 Chili (not necessary)

Cream ( ca 3 dl)

Buillion

Procedure;

Boil down all the ingredients with salt and pepper.

Mash and add cream until teh soup reaches a creamy consistence. Feel free to add some chili if a spicier taste is desirable.

Serve the finished soup in the original pumpkin with garlic bread at its side.

 

Margit Forslund`s pickled pumpkin:

1 kilogram of chopped pumpkin (3 times 3 cm )

Make the pickle out of 4 dl 7% clear vinegar, 800 grams of sugar

25 - 100 gram of fresh ginger(depending on how spicy you want it)

Boil the pumpkin for 8 - 10 minutes in small portions,

put in jars, pour in the pickle and fasten the cap.
